Trebbiano, Novita, Italy (6 bottle case)

Tasting notes: A light, dry and refreshing white wine from the Trebbiano grape, with notes of citrus, acacia flowers and a touch of minerality leading to a zesty and lingering finish.

Producer: The Novità collection is made by winemaker Enrico Salvatori of Cevico, one of Italy’s most important wine-making organisations, who own over 6,700 hectares of vines, so consistency of quality is guaranteed.

Winemaking: The grapes were briefly macerated on their skins at 10°C followed by gentle pressing. Fermentation took place in stainless steel tanks at 19 to 19°C, with a selected yeast strain. The wine was then filtered and left to rest in tank until bottled.
